Healthy Banana Bread with Orange Blossom Honey

Ingredients:

  • 3 ripe bananas, mashed

  • 1/4 cup orange blossom honey

  • 1/4 cup brown sugar

  • 1/4 cup unsweetened applesauce

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • 1 cup oat flour (you can make this by blending oats until fine)

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • Optional: 1/2 cup chopped nuts (walnuts or pecans), or chocolate chips

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

  2. Prepare the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, orange blossom honey, brown sugar, applesauce, eggs, and vanilla extract. Mix until well combined.

  3. Combine the Dry Ingredients: In another bowl, whisk together the all-purpose flour, oat flour, baking soda, baking powder, salt, and cinnamon.

  4. Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

  5. Add Optional Ingredients: If using, fold in the chopped nuts or chocolate chips.

  6. Bake the Bread: Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool the Bread: Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

  8. Serve: Slice and enjoy your healthy banana bread!

Tips:

  • Storage: Store the banana bread in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.

  • Freezing: To freeze, wrap individual slices or the whole loaf in plastic wrap, then foil, and store in a freezer-safe bag for up to 3 months. Thaw at room temperature or warm slices in the microwave.
